Tomato, chickpeas, peppers, red onion, courgette and new potatoes are deliciously combined to make this amazing cod dish. The perfect balance of veggies and protein in every bite!

What do we love about our spanish cod?

This tasty dish provides a wonderful way for children to try fish. White fish is not considered an Essential Fatty Acid in the same way that salmon is but it is still a complete protein source, which contains all essential amino acids, which is a rich source of Omega 3 Fatty Acids and is a lean protein.

Ingredients:

- 1 glug of oil
- 1 small red onion- chopped
- 3 garlic cloves- chopped
- ½ tsp- smoked paprika
- 1 heaped tsp- tomato paste
- 400g- chopped tomato
- 200ml- water
- 1- veg stock cube
- 1 tin- drained chickpeas
- 1 - diced red pepper
- 1 - courgette cut into half moons
- 1 tbsp- black olive tapenade or paste
- 100g- fresh spinach
- juice of 1 lemon
- small handful of flat leaf parsley- chopped
- 2 pieces- cod
